One of the most practical things you can do with the knowledge of how the minor scale can be altered is to use it to figure out chord progressions. This is related to ear training. Hearing how all the chords in a song form an integrated, interlocking progression that leads from one to the next, using the harmonized notes of a major scale. This is the essence of what "key signature" means.
