If you have any pointers on how to position my left hand so that I have good form while doing the scale that would be helpful particularly when trying to hit the lower E string 5th and 7th fret (A and C) my wrist is bending uncomfortably.

Hello - thanks so much for the question! Aim to position your thumb behind the neck at about the halfway point. Try to keep your hand and fingers as relaxed as possible. It is difficult at first, but keep at it by practicing the scale slowly. Eventually, your hand will loosen up around the fretboard and it should feel less and less uncomfortable. Hope this helps!!
