Yes, it is highly possible, and even probable, that guitarists will get it. My former guitar instructor had it, had to get his veins stripped, put back into place, etc; Luckily, he reacted immediately, saw a doctor during the first signs (hand becomes a little numb, for a short time). He plays fine now, though...

As far as preventation, it's something you really just have to watch. You can move your fingers around and your wrist in certain ways if you feel that it helps, but I can't say whether or not it does, I'm not a doctor (ask simon:D;)).
