So I recently got a nice condenser mic for Christmas and was wondering if you guys think it is genuinely helpful to record your practice sessions? I was thinking it might be helpful as well as cool to document my progress over a year. Has anyone done anything like this and did you find value in it?
Recording progress.
I recorded Highway to Hell when I was just getting started, and then made a few more recordings. But haven't really done anything else. It may have been simple beginner enthusiasm. Now I am just more apt to pick and play.
However, you have a new toy, shame not to at least give it a go. I think you will have the answer to your question in a few weeks.
This year the diet is definitely gonna stick!

Yes. IMO it can be a valuable training aid as long as you don't turn it into a drag excessively analysing and negatvely critiquing. Set objectives, but also maintain balance & perspective. IMV, learning guitar needs the joy kept in the journey rather than being a Farcebook face to others or competitive race.
I record at intermittant but regular review intervals with a venerable Everio SD HDD video camera I've had for an aeon mounted on a lightweight portable collapsable Manfrotto tripod, and subsequently review. The res is lower than that of either my smartphone or SJCAMs, but it's most convenient, and both its mono audio and SD vid are adequate for my self-evaluation purposes.
