Looking for new electric guitar
I am a long time acoustic guitar player, but am really interested in getting started with an electric guitar. I have noticed some has 2 pickups while some have 3. If I am not planning on being a rock star, just want to play with my buddies for fun, how important is the number of pickups. Also is Ibanez a quality product.

The number of pickups give you more tonal options. I have guitars that have three pickups, some that have two pickups and some that have one pickup. It really is all personal preference.
The three pickups would be Neck, Middle, Bridge due to their locations on the body of the guitar. Neck being the pickup that is closest to the neck of the guitar, the bridge being the pickup that is closest to the bridge of the guitar and the middle... Well that's easy.
Me, I kind of like a simple guitar, one pickup (bridge position), one volume control.

On average, a '3 pick-up' guitar is going to be a Fender Stratocaster style guitar with three single coil pick-ups. A 2 pick-up guitar is going to be more of a 'Gibson' type guitar (Les Paul etc).
Now this is not at all a hard and fast rule. Not at all. Gibson's sometimes have a single coil type of pick-up in them and Strats definitely can have humbuckers in them.
For a sound difference, check out this video. It's simple and doesn't explore all kinds of music but you can get an idea of the differences.
Both offer great sounds but it depends on what you are looking to play and even with musical styles, each can be applied in different ways.
So the difference is what really sings to you.
