I know that the videos help me with the left hand fingering, but is there a way to notate the fingering, especially in complicated arpeggios on the tab and notation? It would help immensely.

Fingering is usually noted underneath or above the tab, with the finger numbers under or above each note.

Also try different fingering possibilities. My finger are, I guess normal size and can only stretch so far. I've also found a cure for my terrible alternate finger picking. I just use the finger closest to the string I need to play when I rest my thumb on the top string.....duh. Some fingers have to do double duty though. Five fingers----six strings. I just found two hand positions that work for me.
