I'm interested in classical style ( I think) where you play multiple notes at a time but the melody comes through.
Thanks for outlining your skill level, goals & timeline. :)
First, go through the GF2 course to get a solid foundation in theory:

Next, there are two paths to work through: acoustic & classical.
Lisa does a great job showing how play acoustic guitar fingerpicking, in a solo singer-songwriter/performer context. She got everything organized by skill level, technique & songs to practice:

This is my list of tutorials that will show you how to play classical guitar style. Again, it's organized by skill level, technique & songs to practice.

You'll notice a lot of nursery rhymes & melodies that kids love. :) I had a lot of fun using this material to play & sing to my kid when he was an infant & toddler.
Edelweiss is a beautiful tune. I love that part of The Sound of Music. Let us know how it goes. Best of success & have fun!
