I'm interested in classical style ( I think) where you play multiple notes at a time but the melody comes through.

First, go through the GF2 course to get a solid foundation in theory:

You'll notice a lot of nursery rhymes & melodies that kids love. :) I had a lot of fun using this material to play & sing to my kid when he was an infant & toddler.
