Okay I have wondered what this is called for a while...When I hear Steve Vai and Joe Satriani play, sometimes they have riffs that sound Egyption-like. An example, is the song Incantation by Steve Vai, and Oriental Melody by Joe Satriani. What is the real name of this style called?? Also, are there scales for these styles?

It's simply non-western music. The styles stem from Egypt, the Middle East, south-east and east asia, and basically anywhere that western music wasn't prevailant/existant. The Falcon has several good lessons on these scales, look him up in the instructor section.
