The C7 chord that ends the second verse is a strong harmonic call to the IV or F chord that starts out the bridge.

Notice how the vocal rises along with the harmonic structure, to give the song a "lift" for the bridge. Songwriters take note!

Harmonic structure is strongly affected by the use of dominant 7th chords. We got in to the bridge using the I7 chord, and now we use the strong V7 chord to turn the song back over to the I chord and the third verse.
