You might look into some stuff from Vinnie Moore's first albums. All of it is easy to play and the theory behind it is pretty straightforward. In particular I recommend the tracks "Morning Star" and "NNY".
You might also look at Tony Macalpine's first couple of albums (Edge Of Insanity and Maximum Security I think its called), a little more difficult than Vinnie Moore but still fairly straightforward in the theory.
