Difference between amps that have more or less watts than others

how is a 15 watt amplifier different from a 100 watt amplifier if they are both the same model?

More power output means more potential volume.  With traditional tube amps it typically means it turning it up to close to full output is required to get the best overdriven tone from it.  Which is exactly why smaller output models are made.
