You can trill or play legato with the fretting hand, that sounds the strings. Then with the pick hand, touch the string where you would normaly sound a pinch harmonic.

Zakk Wylde wasn't the first to use pinches. Eddie Van Halen was big on them, and my guitar teacher used to tell me how when he was a he kid his friends would do them all the time. They just called them speals cause they didn't know they were harmonics.

That's more of an artificial harmonic rather than a "pinched" pick harmonic.
