Glad you liked it. I've been making that recipe for over 20 years so I'm probably used to the hotness by now.
I figure eating the chili is like playing guitar - it hurts a bit, but you like it so much you keep going back for more.

You can get by with just any one of the onion types but they have subtle differences in taste and the combination of the three just seems to work.
The cooking onions are those smaller ones that you usually buy in a bag. They're stronger and more intense in flavor. The red and white onions are sweeter, larger and pretty mild in comparison.
