Why does my index finger knuckle at the palm keep muting the high E string when I play chords? How do I prevent it from happening? THanks in advance for your help.

Great question! You'll need to work on reaching your fingers all the way around the neck as to not mute any strings. It will take some practice, but I'm sure you'll get it!

Fret the strings with the tip of your fingers. This shows pretty much what i mean. An idea: when you play the chord think of your fingers as "arches", that is, arching over the high E string.

I had that problem too. I found what helped me was to move my wrist forward (around the neck) to give my fingers more clearance.
