The answer is; by looking.
You're getting used to things and part of that is hitting the right strings. I mean, in a way, you'll always do that. About 20mins ago, I was noodling on something with a more complex jazz chord. Not one that I'm terribly familiar with. I kept missing a string when fretting the chord. How do I fix it? Looking...and I've been playing a long time. It was not a normal or comfortable chord, so I needed to take a looksee.
Don't rush to play something if the coordination between your left hand fretting and your right hand picking is not in sync. Slow down and take the time to get them in sync. To my wife, a new player and opining she had the same issue, I said, 'Just because a driver gets a new drivers licence doesn't mean that said driver is capable of driving Formula 1 cars.'
Guitar players of all skills are guilty of the want to be Formula 1 on any new skill. Ain't gonna happen. But, this should be good for you to know that you'll always have to slow down and maybe even take a look. You just may need to do it more often right now.
Just don't worry about. Get those skills in sync and when you've got it at a slower pace, speed it up a little.
