They are called simple chords because you are able to play them with only one fretted note (except Am) and only the top three strings. In just a few more lessons Lisa will teach you the "full" open chords that use three fingers (except for Em) on 4, 5, or all 6 strings. The simple chords are a gentle introduction to give you the ability to start strumming songs right away.
You can definitely learn a lot just using the simple chords. You start to get a feel for how to apply the right pressure and angle on the strings, how to use your right hand to play just the strings you want, how to play in rhythm, how to train your right hand and left hand to work together. It's a nice way to ease into it and start having fun right away instead of trying to play songs with full chords before you are anywhere near capable of it.
