James8831 is right about the picking and damping with the thumb. You can (theoretically) get pinched harmonics anywhere on the guitar but some seem easier to find than others! In practice you should be "pinching" the string 12 frets above where you are fretting it. This means that you are often pinching beyond the neck, somewhere over the pickups. It really comes down to lots of practice and experimentation.
