Going good in fingerstyle with Lisa reached scarborough fair and am not sure if its me but her fingers are doing something completely different to what the tab shows, and sounds different too

Which part are you referring too. From Start to the 2.25 minute mark was her fancy set.. She explained it is optional. Sounded off to me, but I didn't try playing it. The fingering looked right to me. sounded better played a little faster.

It sounds and looks like 3/4 time picking but tab shows something different, and weirdest rendition of scarborough fair i ever heard.
