Anyone who has listened to any Sublime song knows that many of their tunes have choppy ska/reggae guitar in them. I have their tab books, but when I try to play the "reggae" style, it never sounds quite right. It needs to be more choppy or muted or something, but all my attempts never seem to be right. Can anyone tell me how to do this? I'm thinking it may just be because I'm trying to play it on an acoustic, but I've heard Bradley play this style on an acoustic before so.... ??

the idea to this is to mute the strings with your right hand AND your left fingers, that lift off the fretboard as soon as you have played the chord.

Not being that familar with Sublime, I can't say much about them, but I like what little I have heard, to add to what lalimacefolle said, to get that classic Reggae sound also depends on the rhythym, Rock is usally on the downbeat, reggae is on the upbeat, in 4/4 that would be, 1 and 2 and 3 and 4 and , count that out and play on the "and", a kind of upstroke chop with the pick, immediately muting, not letting the chord ring, Later Mon.
