LF information on guitar strings

I am pretty much completely new to guitar. With that being said I really could use some information about picking strings for a new player, changing strings etc. I even seen something about stretching strings which I have no idea about. I tried to use the search function but its not forum specific and I did not see any lessons to this specific query. Thanks for any information you may provide.
