The 7th chords are very useful in bluegrass, country, and other genres too. Basically to make a 7th chord, you add the 7th note of the scale. For instance, using an A major chord, you add a G note. One way this can be done is by lifting the ring finger to play the G string open, and the rest of the chord stays the same. The other way is to use a bar in the 2nd fret, and add the G note in the 3rd fret on the first string.

In some cases you may just add the 7th of the chord, like with a G chord. The G note is changed to the F note in the 1st fret on the 1st string.

I added the other A so you could see that it just repeats. These are not the notes of the scale, because the G scale has an F# in it. The 7th chords have a unique sound, and you should be able to tell which note fits. I hope this helps you, and let me know if you have any other questions.
