It's technically possible, but not practical. It's the exact same thing as a down stroke, except instead of using your thumb to mute, you can use your index finger I guess. All pinch harmonics is, is touching the string right after you pick it. It wouldn't make a difference if your coming up or going down, just as long as you touch the string after you play it.
