I'd say the albums Seasons in the Abyss and South of Heaven are both plentiful of cool songs that are easy to pick out by ear...or just chug along where you can as you pick it up. Plus, they exclusively use Eb tuning throughout, so it's easy to jam to them all without re-tuning.
