i can answer one of those questions, now I'm assuming when you say 6th string your talking about the high E, and pinch harmonics are about placement mainly, hitting the string in a differnent place produces and different harmonic. But you must hold the tip the pick(better with thicker picks) very close to your thumb and as your pick hits the string, your thumb should hit the string as well, thus producing a pinch harmonic. I wish there was a better way for me to explain it, but also, different tunings can provide different harmonics. Zakk Wylde does his legendary pinch harmonics in D flat or C usually, but when in standard tuning, its not too easy to pull those off. It just takes practice, Im sorry I can't explain it as well as I wish I could, I hope this helps a little bit though.

I'm not too sure what you mean by "double pick", do you mean alternate picking?

Also it is much easier (to me) to get the pinch on the higher strings. 3rd, 4th or 5th.

Ok Creating pinch harms on thicker strings are harder. I use overdrive to get this effect cause it's easier. It is just the very edge of the thumb catching the string. You'll do it once quite by accident and keep doing it there after cause of the way you hold the pick and attack the strings. As for the other thing. I think you are talking about double stopping. This is where you finger of your left hand covers 2 strings and they are played together like a 2 note chord. A very effective blues method which i employ and that is easy to do but needs to be used sparingfly in solo playing otherwise it can sound very robotic. For both methods it's more to do with Soul than technique so keep practising and you'll get it down to a fine art.
