On all the Ibanez guitars I have (and it's quite a few!), the volume and tone knobs just pull off.

It's all metal, so it shouldn't break easily but I guess if they are seized and you are very strong I guess it's possible.

Could you get some WD-40 (oil in an aerosol can) into it or something?
