bummer the binding didnt totally work out, man. that one sure is a beautiful guitar though.

If I might suggest:

I have found that applying edge veneer to a curved piece often turns out better if I only glue in a bit at a time. Try starting at a relatively straight part, like the end of the body opposite the neck pocket, and only glue the binding into place from there to about 2/3 of the way around the first bout. You want to call a halt at the point where the curve changes from convex to concave. After this has settled firmly in place, you can push the binding back against this installed section to get it to follow the curve between the bouts. Stop at the point where the curve transistions from concave to convex, and let it settle in. Take the next step as far as the next curve transition, just past the horn. When that is firmly in place, you can again push the binding back against the attached portion to persuade it to follow the curve of the cutaway.

I did slow right down doing the top & things went better. Also your advice to leave the bearing track marks on the sides until cleaning up the binding was on the money.
