Could someone explain to me exactly what a double stop is, and how it's used in music? Thanks

Double stop -- as I know them -- refer to 2 note "licks/riffs".

Example.

Pride and joy SRV, Opening riff.

e l---0-0-0-0-0-0-0-3-3-3-3-3-3
b l---3-3-3-3-3-3-3-4-4-4-4-4-4
g lXXXXXXXXXXXXXXXXXXXXXXX
d lXXXXXXXXXXXXXXXXXXXXXXX
a lXXXXXXXXXXXXXXXXXXXXXXX
e lXXXXXXXXXXXXXXXXXXXXXXX

So basically any 2 note riff played in a repetitive fasion. Look into Chuck Berry.
