Yeah, I'll put in another vote for Jimi. Little Wing is really one of the most interesting songs ever as far as rhythm guitar goes.

Also, Andy Summers from the Police came up with some cool riffs.

And John and Paul from the Beatles didn't come up with very many rhythms that were all that innovative, but the chord progressions they used in some of their songs were awesome.
