I have a Boss GT-8 that I am using to record to my PC. The two outputs of the Boss are run to my mixers stereo inputs. Then my mixers outputs run to my soundcard on my PC. I need a way to also run one more cable to my guitar amp, so I don't always have to mess with the cables. Can I buy something that has one stereo input and two stereo outputs, like a direct box kinda?

Yes you can I'll get the link. See how Brian May got's it setup. That's what you want to do pretty much. http://guitargeek.com/rigview/123/ I don't know where to find one exactly but musicians friend probably has something like that.

This would work. http://www.musiciansfriend.com/product/Live/Sound/Signal/Processors?sku=150109
But I would like something that has stereo inputs and at least one set of stereo outputs and one mono out. I'm gonna keep looking.
