replacing a Strastocaster pickguard ?

Do I have to take the string off to replace to pickguard?
The pickups are attached to the pickguard.

They tell you, when replacing the strings, to replace one string at a time, because you do not want to take all the tension off the neck.
If that's true, is it OK to take all the string off to treplace the pickguard?

That's only a problem if you leave the guitar that way for a long time. Changing the pickguard should only take an hour or so. Even if you have no strings on the axe for a day or two, it should be OK.
