Hm... a guitar with no knobs? Well, personally I would find that a bit monotonous after awhile... I have to switch guitars after awhile because I get bored with the same tone over and over and my two main axes are both Strats... one has a 5-way switch and the other has dual humbuckers with a 3-way les paul switch... I play each guitar in all positions at some point while I'm playing. but its your personal preference right!? haha. It can be done, but i would advise against leaving the volume knob off... because sometimes if you're getting nasty feedback all it takes is a nice tweak on the volume knob. But yes... it can be done. The guitar would put out the pure tone of the pickups and you might get more feedback than normal... but it can be done. Wire each pickup directly to ground and the hot wire straight to the jack. Thats as straight forward as it gets. I would suggest wiring in a 3way switch (you can either leave it in the body cavaty, unexposed, or rout it in the body...) because that way if you ever want a different tone you can get it... and it would help bleed some current out of the circuit to help with feedback problems.
