I say go out and play a fat strat. If you like how it sounds in the bridge then go for it. You can alway's have a switch installed that will allow you to split the humbucker into a single coil. If you remove the pickguard of your strat I believe you will find that it is already routed for humbuckers in the bridge and neck position. Don't quote me on that, but I believe all their bodies are routed like that.
