Now, i know this quite an open-ended question, but any 2 cents would help.

Am just beggining with the guitar, and am quite interested in the chord theory.

Any suggestions on where I should start reading? Books? Online articles?

I couldn't find any articles on the site explaining this theory, and things like what are pentatonics, semitones, why do some chords have major, minor and sharp (like the C-chord), while others don't?

There should be lessons here on basic chord construction and almost anything. I know in the beginners guide there should be a starting guide to theory.

Major and Minor are types of chords. A sharp is relative to pitch so you can have Cmajor but up one fret is C#major. Not all chords are Major or Minor but you can add a note to either to get something like Cmaj7. The 7 being a note you added. Try starting here. http://www.guitartricks.com/lesson.php?input=7643&s_id=65

Thanks! that link explained a lot :)

Could someone explain me what is a perfect fifth, or seventh with respect to a guitar? And what are harmonics?

Forgive me if these questions are too vague, but thats the level of confusion that i am in right now :(

A perfect fifth is just an interval, it can be played on any instrument.

A to E is a perfect fifth.

All modal intervals (2nd, 3rd, 6th, 7th) can be either major, minor, agumented, or diminished. Tonal intervals (1st, 4th, 5th) are called perfect intervals. They are supposed to never be changed. Although sometimes you can find an augmented or diminished 4th or 5th interval.

The 7th is the 7th interval of the root. There are 7 different types of 7th chords. They are made by adding the 7th of a triads root to a triad.
