What are some well-known songs with easy solos?
Are you calling Homer Simpson a liar?
Well we have attained a footage of him with his pants on fire...

I don't know what you consider to be easy solos, but anyway here are some i think are easy and well known:

Metallica
nothing else matters
fade to black (intro solo)
the unforgiven

Guns n' roses
Don't cry

Queen
Bohemian rhapsody

I think the easiest solos are the ones that you know the most.

Solos that you can hum out without having to think about it.

Don't Cry is a good one.

Fade to Black - Metallica

Sanitarium (intro solo) - Metallica

November Rain - GnR isn't that hard if you know the solo really well.

Just familiarize yourself with the songs and it will be even easier.
Sometimes I hit notes only dogs can hear.

The one in the middle, with all the bends. Not so hard if you can hear the solo playing in your head.

The outro is a little more difficult. ;)

I found the solo for Little Wing by Jimi Hendrix to be a pretty easy solo to get down.
