Most necks are made from maple. Ebony, rosewood, etc. refer to the fingerboard itself- mostly an aesthetic thing.

I have an awesome neck on my Ibanez mmm1, it has a mahog neck, but the entire guitar is oiled only and not finnished...I love that neck...The neck on my Gibson is my favourite profile, but the finnish on it is rather annoying...nothing years and years of playing wear wont fix tho..(I refuse to sand it down)
I also like maple necks alot...although the best enck I have ever played was on a Prs modern Eagle..It has a one piece Brazilian Rosewood neck. which is juts amazing..pitty its so damn exspensive and rare, cos that wood is great!
