Like many other things in music scales are there to be used as a guideline. They are used to see what chords will usually sound great together, and what chords will have dissonant. They are used to see what notes will fall better with each other during a solo and how to harmonize with other instruments. They are used for a lot thing, so they are very important to music.

There are lots of way to learn scales. Buy a scale book. Learn the modes. Look online. Learn the music theory way. Just remember you wont learn them all in one day.
I can't help it. When I get an idea that excites me it's as if I can't breath unless I make it real.

There are alot of scales probably thousands. It can be overwhelming. I suggest starting with the 5 basic scales. 1.major 2.minor penatonic 3.blues 4.minor 5.major pentatonic. Hope this helps.

There are hundreds of lessons covering this topic here at GT.

If you go to the home page and either search lessons by category using the red bar at the top of the page or use the search function at the top right you will find plenty to be getting on with.
My instructors page and www.studiotrax.net for all things recording.
