I'm looking to upgrade my soundcard with something that's top level audiophile type of thing.
Any suggestions?

I'm using an older Mac with SCSI if that makes any difference.

there are lots of audio interfaces and you can basically spend as much as you want.

MOTU is good kit.

If I were in your position Id first think about what you want this new bit of kit to do and then go from there.

Mostly to reproduce VST synths and effects with as much quality as possible.
The standard card sounds pretty good but I'm sure there must be better available.

Try looking at www.music123.com (who will ship internationally if needs be) or www.musiciansfriend.com (who are idiots but have a good website) to find something that fits the bill and then do a UK google /yahoo search for a local supplier. Someone like www.piedog.com may have it.
