Here's a couple of examples of string popping in G. The first thing is to dump your pick in favour of the fingers and thumb (although you could do this with hybrid picking).

String popping basically involves getting your finger or thumb behind the string and pulling it away from the fretboard before you then let go of it, creating a very snappy, percussive tone. I like to use this technique ALOT because it increases your tonal pallet and the range of dynamics you can achieve.
