If you want to play this song with only one guitar, focus on the more iconic parts. For instance, start out with guitar 2 in the intro to set the song up. Then once the song get's going switch to guitar 1 for the rhythm parts. After that you can stick mostly to guitar 1. Except for the solo where it would be really cool to switch to guitar 3 and give the solo a shot.

It could even be interesting to play guitar 3 in the last pre-chorus to change it up a bit and really give the last chorus a screaming introduction. Except for the parts I just mentioned, sticking to guitar 1 will work just great.
