I have my calluses pretty well built and can play a pretty good while without pain. However, I also produce "ridges" on my fretting fingers and sometimes it causes the string to be plucked awkwardly when changing strings with that finger. It is primarily with my middle finger.

Any ideas as to what I am doing wrong getting these ridges?

Nothing. Like calluses, tip ridges or dents developing with significant time spent playing regularly are entirely normal IME.

IDK how they're interfering with your fretting finger placement though, unless perhaps the callus' skin is seperating and catching under a string as you lift?

I still have ridges develop while I am playing but at least they aren’t scaling off and catching strings as much anymore, so it seems to be getting better. Started playing in a January.

This year the diet is definitely gonna stick!

Fill them with Bondo! Just kidding there. I've only been playing for about a month, but have finally advanced beyond the "I've got blisters on my fingers" stage to "I am painfully numb" in the fingertips.

I've talked with experienced guitarists who say the calluses eventually fade as the skin starts to adapt; apparently, the fingertips get thick like a brick. But, I think the ridges are here to stay; they'll just become more pliable as the skin adapts. For now, I'm just working through the pain. No bleeding anymore, so apparently making some gain.

Yes Man X Cat, if the ridge catches if plucks the string a bit as I am moving that finger and causes an unpleasant sound. For some reason it is only with my middle finger.
