I usually play a Les Paul but I am thinking of buying a acoustic guitar.
I am willing to pay up to 3k. I want a guitar that is well made. Which
companies and models should I consider?

If I had 3K to spend, I'd seriously consider a Taylor. Then I'd even more seriously consider the Taylor T5 and give my shoulder a break from that Les Paul. I had one for a couple of years and got really tired of holding it. The T5 has an awesome acoustic pickup that sounds great through an electric amp. Just my personal opinion, but you should try many many guitars to find the "right one" for you.

I see Takamine wasn't mentioned. Garth Brooks played one in his Las Vegas one man show. He and the guitar were awesome.

I play a Ibanez 370

If I had your budget I would most Likely try every Cole Clark, Takamire, Maton and Martin in store and buy the one I liked best you might want to consider a les paul with a 3k budget u may get one not sure the price range.

Whatever you buy make sure it fells comfortable and you like the sound

Maton Range wasn't mentioned either. Over 12 months ago I bought my first Maton acoustic guitar. It's Maton 325C to be exact. I love it! It's got a really good pick-up system. It sounds awesome! I would have gone for the top of the range which is the Messiah EM100C if I had the money but Maton 325C will do me for now.

Also, I have a 30 year old acoustic Washburn and 15 year old 12 string yamaha acoustic.

I went thru a long process last year of replacing my Takamine. I played everything I could get my hands on and ended up with an $800 Yamaha A3M.

The A3 series are all solid wood construction.

Worth checking out if there are any your area.

Don't leave Santa Cruz guitars off the list as well. I've had one for 2 years and it is a wonderful sounding guitar. I have the dreadnought pre-war model, D/PW.
Martin HD-28 acoustic
Santa Cruz D-P/W acoustic
Fender Squier Telecaster electric
Fender Mustang amp
