Could I use a laptop as a recording device for gigs? (example; everyone's hooked up to the PA, send a PA signal into the laptop, voila!) ?

I've never seen anyone do this before. is it possible?

People do it but it is always difficult getting a nice mix from the front of house desk. The front house mix will be compensating for the volume people play at on stage and so will always sound a little odd. Some Jam bands will solve this by recording 4 tracks, two mics picking up front house sound and an additional two being fed by the front house desk. If you have the kit you could do everything via multitrack recording but that is going to get expensive.
