Where in my journey should I start practicing fingerpicking. Right now I'm in guitar fundamentals 1 still learning the chords...

As it won't be a whole lot of use unless you can play the most common open chords instinctively, if you're a rank beginner, I'd suggest completing at least Fundamentals 1 to tactile competency first.

Once you have the A,C,D,G,E,F major and A&E minor open chords and changes instinctively fluid, you'll have the capacity to focus on co-ordinating the strumming/picking hand to the degree necessary whilst the fretting hand instinctively plays the chords. You could parallel Acoustic Fingerpicking with Fundamentals 2, or after, depending upon your level of playing competency and assimilation capability.
