House of the Rising Sun was actually a folk song, or Irish song (I forget which one) that was reworked into a rock song. The original was about a girl who goes to work in a Brothel. For a cool trick, try singing Amazing Grace over the changes of House of the Rising Son.
Emerson, Lake, and Palmer...couple of my favorite classical covers are Copelands "HoeDown" and "Fanfare for the Common Man". I know off the top of my head, that they also recorded versions of Murzarki (sp?) "Pictures at an Exhibition" and Ravels "Bolero", among many others.
Jeff Beck also did a cool version of Bolero.
Extreme did a cool version of Flight of the Bumble Bee.
Phish always does 2001 Space Odyssey.
While surfing the web one night I came across a guitarist from Seattle who had a cd out called Strat to Stradivarius which had a lot of cool classical covers on it.
