[p]It's essentially multitrack video recoding & editing. You record all the guitar parts one at a time separately. Then you import all the footage into software designed to handle multiple video/audio streams. It's usually called the Picture In Picture effect.

There are quite a few software programs capable of video editing. I use Adobe Premiere. I don't know about any phone apps that do this. Here's an example I found on YouTube describing the process.
