Because fingerstyle is more of technique than a genre.
Fingerstyle technique is used to play virtually every genre of music: blues, country, jazz, pop-rock. And of course as you mention classical style is virtually all fingerstyle playing. Further, each genre uses fingerstyle technique in overlapping, but slightly different ways.

I think you'll find most of the Acoustic style songs & tutorials focus on fingerstyle technique. Except for the ones that use strumming! :)
