Also make sure that the strings aren't forming a loop as you are tightening them. If they are, they will twist on themselves and snap.

Also make sure that you aren't tuning them above pitch as you change them. I've surprised myself recently thinking I was tuning them low and after I finished restringing, they were actually above pitch.
