Btw, the string should never touch the fretboard, even with unscallopped fretboards.

The difference is that they are harder to play, if you apply to much pressure, you go out of tune very easy. This means you have to use a light touch, wich means in the end you'll be playing faster. And bends are supposed to be easier cause your fingers won't touch the fretboard.
