Rosewood tends to have a warmer tone, because it tends to absorb a bit more of the top end. Maple is "snapier", and will have a bit more bite. Of course, every piece of wood is different, so these are generalizations.

Personally, I like ebony fretboards. Snappy, with lots of sustain, and feels very fast.
