pro·fi·cient /prəˈfɪʃənt/ Pronunciation Key - Show Spelled Pronunciation[pruh-fish-uhnt] Pronunciation Key - Show IPA Pronunciation
–adjective 1. well-advanced or competent in any art, science, or subject; skilled: a proficient swimmer.
–noun 2. an expert.

saying someone is proficient at guitar is a less-cocky way of saying they're a "virtuoso" or "can serenade your girlfriend into bed".

people get too technical with the name game. can you rip? can you comp? can you get down with other musicians and make REAL music (improv) that sounds origional and unique? can you write what you play? can you compose? can you emulate other's styles? do you have your own style?

if i was a technical dork i would make you take a quiz and have you check which ones apply, but it doesn't really matter. just be humble, learn with grace and play like a motherf**ker. THAT'S how you become "proficient" in guitar.

but yea, the pancake thing sounds intense enough to merit the name.
